In February the Relief Society weekday meeting is on Date Night. I am really excited about it so I thought I'd share a few things that I decided to do since we started to plan this activity.
I saw on pinterest an idea to make a date night can. They had a lot of good ideas on there for dates but I wanted ones that we could do at home because it is really hard for us to get a babysitter. So I started to search online and found some awesome sites. One is an old Ensign article that I used some of the ideas from. I typed up all of the ideas I got and then printed them out and cut them up and put them in a can I made. I used an old sour cream container (one of the big one's from Sam's) and put scrapbook paper over it. So now once a week on of us will be in charge of date night and it will be a little easier because we don't have to do as much thinking! ;) Which I think can be one of the hardest parts.
I also found some good articles about having date nights with your kids but I'm not sure where I put the info on that one. It was an old Ensign or some kind of church material article. It was really good though. The lady was talking about how they made sure they took their kids out on dates and talked with them and spend good quality one on one time and now that they are in high school they still talk to their parents and especially about the really important things. So we are going to try and do this with our kids even more then before and hopefully it will turn out good for all of us!! :)

More Freezer Meal Recipes
These are from the same site I got my other recipes I use but I haven't tried these ones yet so not sure how great they are. I figured since they are from the same place they probably are good too.
Saucy Beef Chili
To one portion of Make-Ahead Ground Beef, add:
1 can (16 oz) chili beans in sauce, undrained
1 can (14.5 oz) petite diced tomatoes, undrained
1½ cups water
1 can (6 oz) tomato paste
1 pkt (1.48 oz) chili seasoning mix
Combine in large resealable plastic bag. Freeze for up
to three months.
Defrost
Microwave packet on DEFROST (30% power) 8-10 minutes
or until softened. Pour into (10-in.) Skillet and bring to
a simmer over medium heat.
(If cooking immediately, combine ingredients in
(10-in.) Skillet and bring to a simmer over medium heat.)
Finish and serve!
? Spoon chili into bowls.
? Top with shredded cheddar cheese, sliced green onions
or sour cream, if desired.
Serving Suggestions: This chili can be served on top of baked
potatoes or with purchased cornbread, if desired.
Zesty Beef Tacos
To one portion of Make-Ahead Ground Beef, add:
1 cup chunky salsa
1 can (6 oz) tomato paste
¾ cup water
1 pkt (1 oz) taco seasoning mix
Combine in large resealable plastic bag. Freeze for up
to three months.
Defrost
Microwave packet on DEFROST (30% power) 8-10 minutes
or until softened. Pour into (10-in.) Skillet and bring to
a simmer over medium heat.
(If cooking immediately, combine ingredients in
(10-in.) Skillet and bring to a simmer over medium heat.)
Finish and serve!
? Arrange 12 taco shells on serving platter.
? Fill with beef mixture, ½ cup shredded cheddar cheese,
1 cup shredded lettuce and 2 seeded and diced
plum tomatoes.
? Garnish with snipped fresh cilantro and serve
with lime wedges, if desired.
Variation: Zesty Beef Taco Salad: Omit taco shells and
increase lettuce to 12 cups. Prepare beef mixture as directed
in Steps 1-2. Arrange lettuce on serving platter. Top with beef
mixture, cheese, tomatoes and cilantro, if desired.
Barbecue Beef Sloppy Joes

1 cup ketchup
2 tbsp Smoky Barbecue Rub
2 tsp cider vinegar

2 lbs. fresh, lean ground beef
1 zucchini, finely chopped
1 onion, coarsely chopped
4 oz. can diced green chilies
1 taco seasoning packet
1 Hidden Valley Ranch dip packet
2 cans corn, undrained
4 cans (14.5 oz. each) diced tomatoes, undrained
1 can pinto beans, undrained
1 can kidney beans, undrained
½ c. chopped fresh cilantro, optional
Grated Monterey Jack and/or cheddar cheese
Chop onions and zucchini. Brown meat, zucchini and onions in 8-qt. Stockpot. Open cans using Can Opener and add remaining ingredients and cook over medium heat for 30 minutes. Cool completely and pour into freezer bag. Squeeze air out of bag and freeze. Reheat to serve. Grate cheese on top of soup.
Mushroom Chicken
2 lbs. frozen boneless, skinless chicken breasts or tenderloins
1 can Cream-of-Mushroom Soup
1 c. milk
8 oz. carton fresh mushrooms, sliced
4 slices crispy bacon, chopped
1 zucchini, chopped
2-3 cloves freshly pressed garlic
2 T. Worcestershire sauce
2 T. lemon juice (Used in another recipe; may be stored in freezer for one year)
grated parmesan cheese
Place frozen chicken into freezer bag. Combine remaining ingredients except parmesan cheese. Pour sauce into bag and coat chicken well. Squeeze air out of bag and freeze. Chicken will marinate as it defrosts in refrigerator for 24 hours. Remove chicken from bag and place in pan. Pour excess sauce from bag onto chicken. Bake, uncovered, at 400 degrees for 45 minutes (30 minutes for tenderloins). Grate cheese onto chicken AFTER baking. Serve with rice and salad.
Power Cooking Chicken
Make-Ahead Chicken
3 lb boneless, skinless chicken breasts or thighs
1 tbsp vegetable oil
1. Cut chicken into ½-in. cubes using Chef's Knife.
2. Heat oil in (12-in.) Skillet over medium-high heat
1-3 minutes or until shimmering. Add chicken and
cook 7-10 minutes or until chicken is no longer pink,
stirring occasionally. Drain chicken, if necessary.
3. Divide chicken into three portions.
Chicken Stir-Fry
A medley of colorful vegetables
makes this dish a winner.
1. Prepare and freeze
? In Bag 1, combine chicken, edamame and stir-fry sauce.
? In Bag 2, combine carrots, broccoli and seasoning mix.
? Seal Bag 2 and place into Bag 1; seal. Freeze for up to
three months.
2. Finish and serve!
To cook and serve immediately
? Heat oil in (12-in.) Skillet over medium-high heat
1-3 minutes or until shimmering. Add contents of Bag 2.
Cook 3-5 minutes or until broccoli is slightly tender.
? Add contents of Bag 1. Cook 3-5 minutes or until broccoli
is crisp-tender and chicken is hot.
? Serve stir-fry with rice. If desired, garnish with sliced green

? Omit water. Place contents of Bags 1 and 2 into (12-in.)
Skillet. Cook over medium-high heat 3-5 minutes or until
chicken is heated through.
? To assemble wraps, divide cheese evenly among tortillas; top

? Roll up tortillas tightly. Cut wraps in half on a bias

? Cook pasta according to package directions; drain.
? Meanwhile, place water and contents of Bag 2 in (12-in.)
Skillet; cover. Bring to a simmer over medium-high heat,
stirring occasionally.
? Add sour cream to Skillet. Reduce heat to medium; add
contents of Bag 1. Cover and cook 4-6 minutes or until

Bring to a simmer over medium heat; cook 12-14 minutes
or until cheese is melted and mixture is smooth, stirring

There is a Taco Soup recipe on here but I have a different one I use that looks like it is a lot easier then the one I just posted above. Here is my recipe.
Taco Soup
1 can red kidney beans with sauce
1 can red chili bean no sauce
1 qt tomatoes
1 can small tomato sauce
1 can diced green chilis
1 lb. hamburger (browned)
1 chopped onion (cooked w/hamburger)
1 can corn
1 pkg. taco season
cook all together
Top with:
1 pkg corn chips
cheese
sour cream
olives
I normally cook it and we have this for one meal and then I freeze what's left there is always a lot leftover. This is one of my kids favortie meals to so they eat a lot of it.

This thick, family-pleasing so up is bursting with flavor!
1. Prepare and freeze
? In Bag 1, combine chicken, chips and corn.
? In Bag 2, combine cheese spread, tomatoes and rub.
? Seal Bag 2 and place into Bag 1; seal. Freeze for up to three months.
2. Finish and serve!
To cook and serve immediately
? Add contents of Bag 2 and broth to (4-qt.) Casserole.
Bring to a simmer over medium heat; cook 12-14 minutes
or until cheese is melted and mixture is smooth, stirring
occasionally.
? Add contents of Bag 1 to Casserole; simmer 4-6 minutes or
until soup is thickened.
? Serve soup with optional toppings, if desired.

8 oz pasteurized process cheese spread,
cut into 1-in. cubes
There is a Taco Soup recipe on here but I have a different one I use that looks like it is a lot easier then the one I just posted above. Here is my recipe.
Taco Soup
1 can red kidney beans with sauce
1 can red chili bean no sauce
1 qt tomatoes
1 can small tomato sauce
1 can diced green chilis
1 lb. hamburger (browned)
1 chopped onion (cooked w/hamburger)
1 can corn
1 pkg. taco season
cook all together
Top with:
1 pkg corn chips
cheese
sour cream
olives
I normally cook it and we have this for one meal and then I freeze what's left there is always a lot leftover. This is one of my kids favortie meals to so they eat a lot of it.

Freezer Meals Continued
I didn't get to post all my recipes so I figured I would keep adding more since there were so many people interested. This week at our Relief Society week day meeting we talked about freezer meals so I wanted to share on here what I do. As I find more recipes I like or get other things I will post them here as well. Hope you enjoy!
Parmesan Chicken
2lbs frozen boneless, skinless chicken breasts or tenderloins
1 c Italian bread crumbs
2 t. lemon zest
2-3 cloves freshly pressed garlic
1 c. grated parmesan cheese
Place frozen chicken into freezer bag and seal. In separate freezer bag, combine remaining ingredients. Rubber band the two bags together and place into freezer. When ready to bake, defrost chicken in refrigerator for 24 hours.
Coat with bread crumb mixture and place in pan. Bake, uncovered at 400 degrees for 45 minutes (30 minutes for tenderloins). Serve with pasta. Sauce warmed up in micro cooker and pasta tossed with your favorite sauce.
Chicken Tetrazzini
1 zucchini
16 oz. spaghetti
½ stick butter
1 onion, finely chopped
1 c. green bell pepper, chopped
3 c. cooked chicken, cubed
8 oz. fresh mushrooms, sliced
2 c. grated Monterey jack cheese
2 cans golden cream of mushroom soup
3 c. milk
Salt and pepper to taste
Break spaghetti in half and cook as directed on package; drain. Using 8” sauté pan, cook onion, zucchini, mushrooms and bell pepper in butter for 5 minutes; toss with spaghetti and remaining ingredients in a large bowl. Place mixture into two freezer bags; squeeze air out of bags and freeze. Defrost and bake in pan, covered, at 350 degrees for 45 minutes until bubbly.
Those are just a couple I miss placed my recipe book of frozen meals so once I find it I'll type them up and add more!

Freezer Meals
I have been making freezer meals for about a year now and love it so I thought I'd share some of my recipes with everyone. I don't have a picture but I found this site which has some recipes that I might try sometime but it has a great picture of her meals in the freezer so go check it out if you want.

I have to make sure our meals are ready to eat by 5 or 5:15 at the latest since my husband comes home from work at that time but then quickly leaves again for school. It always seems to get crazy around my house but especially around when I would need to make dinner so I started to make my meals (not all but most) one day a month. I don't have all of my recipes typed up yet but here are a few of my recipes that I do have. Hope they help you out!
Mexican Chicken
2 lbs. frozen boneless, skinless chicken breasts or tenderloins
16 oz. jar mild or medium salsa
2-3 cloves freshly pressed garlic
½ c. finely chopped onion
2 ½ oz. can sliced black olives, drained
1 TBSP. southwest seasoning mix
Sliced or grated Monterey jack cheese
Place frozen chicken into freezer bag. Combine remaining ingredients except cheese. Pour sauce into bag and coat chicken well. Squeeze air out of bag and freeze. Chicken will marinate as it defrosts in refrigerator for 24 hours.
Remove chicken from bag and place in pan. Pour excess sauce from bag over top of chicken. Bake, uncovered, at 400 degrees for 45 minutes (30 minutes for tenderloins). Grate cheese onto chicken; bake 10 minutes and serve. Rice, tortillas and /or a salad round out this healthy meal.
Caesar Chicken
2 lbs. frozen boneless, skinless chicken breasts or tenderloins
2 (16 oz) bottles creamy Caesar salad dressing
2-3 cloves freshly pressed garlic
1 zucchini, finely chopped
Grated parmesan cheese
Optional: lettuce, box of croutons or cooked pasta
Place frozen chicken into freezer bag; add garlic and one bottle of dressing, garlic and zucchini. Coat chicken well. Squeeze air out of and freeze. Chicken will marinate as it defrosts in refrigerator for 24 hours.
Remove chicken from bag and place in pan. Bake, uncovered, at 400 degrees for 45 minutes (30 minutes for tenderloins). Grate cheese and set aside. SALAD: slice chicken and serve warm over lettuce, tossed with half of second bottle of dressing, parmesan cheese and croutons. OR serve chicken over cooked pasta and top with grated cheese.
Teriyaki Chicken
2 lbs. frozen boneless, skinless chicken breasts or tenderloins
10 oz. bottle teriyaki sauce
1 TBSP vinegar
2-3 cloves freshly pressed garlic
½ finely chopped onion
1 zucchini, finely chopped
Place frozen chicken and all ingredients into freezer bag. Coat chicken well. Squeeze air out of bag and freeze. Chicken will marinate as it defrosts in refrigerator for 24 hours.
Remove chicken from bag and place in pan. Bake, uncovered, at 400 degrees for 45 minutes (30 minutes for tenderloins). Serve with stir-fried rice and vegetables.
BBQ Chicken
2 lbs. frozen boneless, skinless chicken breasts or tenderloins
1 c. mild salsa
1 c. ketchup
1/3 c. brown sugar
1 TBSP Worcestershire sauce
Place frozen chicken into freezer bag. Combine all ingredients and pour into bag and coat chicken well. Squeeze air out of bag and freeze. Chicken will marinate as it defrosts in refrigerator for 24 hours.
Remove chicken from bag and place in pan. Pour excess sauce from bag over top of chicken. Bake, uncovered, at 400 degrees for 45 minutes (30 minutes for tenderloins). Serve with cornbread twists.
Make-Ahead Ground Beef
1-2 medium onions
3 lbs 90% lean ground beef or 93 % lean ground turkey
3 garlic cloves pressed
Chop onions. Place onions, beef and garlic pressed into (12 in) skillet. Cook over medium-high heat 15-18 minutes or until beef is no longer pink, breaking into crumbles.
Divide beef into three portions. Freeze in freezer ziplock baggie or add to recipes.
Italian Beef Hoagies
To one portion of Make-Ahead Ground Beef add:
1 green pepper, sliced
1 red bell pepper, sliced
¼ cup water
2 TBSP red wine vinegar
1 pkt (1 oz) onion soup mix
1 TBSP Italian seasoning mix
Combine in large resealable bag. Freeze for up to three months.
Defrost
Microwave packet on DEFROST (30% power) 8-10 minutes or until softened. Pour into (10 in skillet) and bring to a simmer over medium heat. (if cooking immediately, combine ingredients in 10 in skillet and bring to a simmer over medium heat)
Finish and Serve!
Sprinkle 1 cup (4 oz) shredded provolone cheese over beef mixture cover with lid and simmer 1-2 minutes or until cheese is melted. Spoon into 6 warm hoagie rolls.
Easy Beef Stroganoff
To one portion of Make-Ahead Ground Beef add:
8 oz sliced mushrooms
1 can (10 ¾ oz) condensed cream of mushroom soup
¼ cup water
1 tsp ground paprika
½ tsp salt
¼ tsp coarsely ground black pepper
Combine in large resealable plastic bag. Freeze up to 3 mths.
Defrost
Microwave packet on DEFROST (30% power) 8-10 minutes or until softened. Pour into (10 in) skillet and bring to a simmer over medium heat.
Finish and Serve!
Stir 8 oz sour cream into beef mixture
Cook 1 lb egg noodles; drain. Toss with ¼ cup snipped fresh parsley and 2 TBSP melted butter.
Spoon stroganoff over noodles and sprinkle with additional paprika and parsley, if desired.
They are so easy and we love them at our house!! I also like to make taco soup and freeze it and whenever I brown meat I brown as much as I can and freeze it or else I turn it in to taco meat and freeze it. Makes life a lot easier later in the month and can be used for a lot of recipes. I also like to use the crock pot sometimes so I don't have to worry about defrosting I just put it in there frozen and it's cooked on high in about 3 hours.

Primary Children's and Temple Square
In December we had to take Blake in for his check up at Primary Children's so we figured we should stop by Temple Square why were down there!! Especially since the week after we stopped my sister got to temple square for her mission so we need to try and not go as much now. :)
The check up went good they put him in a holter monitor for 24 hours (which was a pain to keep an almost three year old from taking it off or bugging it) but I am so grateful we did have it on him because his cardiologist called us yesterday to let us know that he had episodes while he had it on. One of them happened at 3:30 in the morning and lasted for an hour his heart rate was at 260! Wow I didn't realize he was having them! I should of though, he has been acting different but I kept thinking he was getting sick or blaming it on other things :( It will all be okay though we are trying to figure out what medicine he needs to be on now and it will all be fine once we get that figured out! Thankfully it was figured out soon enough that he shouldn't have to go to the hospital! One down side though is that he isn't aloud to have chocolate so I need to try and not have any as well because I feel like a mean mom eating a treat and then telling him "no you can't have this". He so doesn't understand that I can and he can't!! I love him so much and am so thankful he is in our family!!!! Now I just need to figure out what to do from here.....everything is good though it'll be ok!!!
